Day before Thanksgiving + Extra Magic Hours + Animal Kingdom = Mad House (but yet do-able thanks to those oh so sweet Fast Passes).
We were able to do all our favorites due to Fast Passes. The popular Expedition: Everest (new coaster) delayed using the Fast Pass for 4 hours after we got it. Apparently, those Fast passes went... well, fast! I unashamedly give myself credit for saying yes it was okay to do some extra walking to get over there and get them and then back to where we were to go on the Safari. You follow?
In any case, here's what we did:
Safari (super cool)
Lunch at Tusker House (super yummy)
Tough to be a Bug (super intense for Noah)
Expedition: Everest (twice for me! yay)
Nemo: The Musical (faaaantastic!)
Dinosaur (just a'right)
And that took us all day.

somehow we never saw the Nemo musical when we were there. We'll just have to come back!
Oh, that is a definite highlight. You have to watch for the showtimes and line up pretty early for it. I'd recommend at least 45 minutes before showtime. The first time we saw it in April we got there early and were in the 5th row. This time we were in the way back and it does make a difference. Being up close you can see the actors' faces more. The whole setup is much like "The Lion King" with actors holding big puppets overhead.
